Battle Royale seems to be a rather obvious one. (as other people have said)
For Diabolo, Sengoku Nights, and Innocent W....I absolutely LOVE these series. Diabolo is my favorite ever. I love nearly anything by Kei Kusunoki and Kaoru Ohashi....and it would be great to see one of these great series animated.
I stopped reading Vampire Knight...but I defiantly think that it is good enough to be made into an anime.
Sequence is only 1 volume and a few chapters....but I still would love it animated. That will never happen though.
Kanpai! is another one of my favorite series. It is just...great. Too bad the manga stopped. It would be a hilarious anime.
Yureka aka ID_entity for me. However, being a Korean manhwa, it probably won't. Not unless it's adapted as a sci-fi series. What I mean is, a live-action series.

I also would like to see Hana-Kimi animated. I loved the Taiwan live action version, and was disappointed by the Japanese live action *sigh*. Lets try it animated!
Same with Itazura na Kiss/It Started With a Kiss and Akuma de Sourou (Devil Does Exist). The Taiwan live action versions were so adorable. I would like to see these animated!
I would like to see more 12 Kingdoms and Legend of Basara, since those didn't really end. (Especially Legend of Basara!)
More Lucky Star, Ouran, and Fruist Basket would be great. Oh, and more Ashita no Nadja :D
A full series for Shinesman would rock my world.
Some cute Miwa Sakai shoujo would be nice too ( Billion Girl, Sono Otoko Wagamama ni Tsuki). Or some smutty shoujo from Yoshihara Yuki or Shinjo Mayu (Love Celeb)

Blade of the Immortal - I can not even begin to describe how utterly fantastic this would be. FullMetal Alchemist - Borrow the art style from the film and restart closer to the source material. JoJo's Bizarre Adventure - I can easily picture the 3rd arc being shoehorned neatly into a 24 episode series.
I'm tempted to say 20th Century Boys, but at the same time shy away from that idea. Decisions.

However mostly I will say Mirai Nikki, definitely. Epic, epic manga; we'd just have to hope they don't screw it over like they did to Bokurano and other similar kinds of series. Oh, and that they don't animate it until it's finished (or at least close to it)...

I agree with Yoshiko about Skip Beat and Shinshi Doumei Cross. They're both great. :D Only thing is, they are both still publishing. I prefer they wait until manga are finished (or obviously close to being finished) before adapting so that they don't have to get into fillers because they've caught up to the manga.
Tops on my list for adaptation right now is Tokyo Crazy Paradise (same mangaka as Skip Beat). It's finished publishing, too, so I think it'd be awesome!
I would die a happy fan girl if Mr. Fullswing was adapted into an anime series - though I did hear rumors last spring that it was going to be animated within the next year or so ~

This one please. Mirai Nikki would be a nice replacement to Higurashi when it ends.
I'd love to see a good adaptation of Shonan Junai Gumi(Young GTO). Sure, there's already an adaptation out now(still waiting for that fifth episode...), but it's far from the quality of the manga, and lots of the manga is skipped.
I want to see more of GTO, continuing the story where the anime left off(not counting the crappy ending which had nothing to do with the manga's story).
An adaptation of the FLCL manga would be cool too, considering the story is quite different from the original anime.
Pyuu to Fuku! Jaguar... I only read 3 chapters(which i loved), but i feel it could be an awesome wtf-comedy anime.
Obviously i want to see more of Berserk, they cut the anime just when it was starting to get good.

i'd love to see Wild Adapter, Switch & DOLLS (naked ape one) adapted into anime or a few eps ova. all 3 are dark and thrilling... i think they'll be even better in anime form, with a mood setting BGM x3
and my dream is to see a new FMA anime that follows the actual manga D: (once it's over, preferably)

WOO HOO! They just announced that Itazura na Kiss is becoming an anime! I am SO excited! That is one of my very favorite series! I hope they do it justice! :D
